Dulet
Dulet is a traditional Ethiopian and Eritrean dish that is made from minced or finely chopped meat, often including organs such as liver, kidneys, and sometimes lamb or beef tripe. The dish is highly seasoned with spices and typically cooked with onions, green peppers, and spices like berbere (a blend of chili peppers and other spices), mitmita (a spicy chili powder), and niter kibbeh (clarified butter infused with spices).
Gored Gored
Gored Gored is a traditional Ethiopian dish that is often considered a delicacy. It is made with cubes of raw, seasoned beef, and it’s known for its simplicity and intense flavors. The dish is typically served as an appetizer or part of a larger Ethiopian meal.
Scrambled Egg
In Ethiopian cuisine, there is a dish called “Firfir” or “Fitfit,” which is similar to scrambled eggs but with a unique Ethiopian twist. Firfir is traditionally made with shredded injera (sourdough flatbread) mixed with berbere sauce, clarified butter (niter kibbeh), and sometimes cooked vegetables. It can also include scrambled eggs, making it a flavorful and hearty breakfast or brunch option.
Shiro
It is essentially a thick stew or sauce made from ground legumes, such as chickpeas, lentils, or split peas. Shiro is often served as a vegetarian or vegan dish and can be found in various variations with regional and personal touches.
